  • 1 boneless, skin-on turkey breast (about 1.5 to 2 pounds)
  • 1 tablespoon olive oil
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup orange juice, freshly squeezed
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh orange zest
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: fresh parsley or thyme sprigs and orange slices

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the middle.
  2. Pat the turkey breast dry with paper towels. Season generously on all sides with salt and pepper. Let it sit at room temperature for about 15 minutes.
  3. In a small bowl, whisk together the cranberry sauce, orange juice, melted butter, minced garlic, orange zest, Dijon mustard, and dried thyme. Set aside.
  4. Heat the olive oil in an oven-safe skillet over medium-high heat. When the oil shimmers, carefully place the turkey breast skin-side down. Cook undisturbed for 4-5 minutes until the skin is deeply golden and crispy.
  5. Flip the turkey breast using tongs. Cook for another 2-3 minutes on the other side.
  6. Reduce the heat to low. Pour the prepared cranberry orange glaze over the turkey breast, coating the top and sides. Let it bubble gently for about 1 minute.
  7. Carefully transfer the skillet to the preheated oven. Roast for 25-35 minutes, until an instant-read thermometer inserted into the thickest part reads 155°F (68°C).
  8. Remove the skillet from the oven. Transfer the turkey breast to a cutting board. Tent it loosely with aluminum foil and let it rest for 10 minutes.
  9. While the turkey rests, make the pan sauce. Place the skillet back on the stove over medium heat. Add a splash of water or chicken broth (about 2 tablespoons) and scrape up the browned bits with a wooden spoon. Let it simmer for 1-2 minutes until slightly thickened. Taste and adjust seasoning with salt and pepper.
  10. Slice the turkey breast against the grain into 1/2-inch thick slices. Drizzle the pan sauce over the top, garnish with fresh parsley or thyme and orange slices if desired, and serve immediately.

Don’t skip the sear—it builds flavor and creates fond for the pan sauce. Watch the heat during roasting as the glaze can burn; tent with foil if needed. Let the turkey rest for 10 minutes before slicing to keep it juicy. Use a meat thermometer for best results.
