Ingredients

Scale
  • 4 boneless pork chops (about 1 inch thick)
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • ¼ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon dried thyme
  • Olive oil spray
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 clove garlic, minced
  • ½ teaspoon lemon zest

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides with salt, pepper, garlic powder, paprika, and thyme. Let sit while setting up breading station.
  2. Set up three shallow bowls: Bowl 1 with ¼ cup all-purpose flour. Bowl 2 with 2 beaten eggs and a splash of water. Bowl 3 with 1 cup panko breadcrumbs mixed with ¼ cup grated Parmesan.
  3. Preheat air fryer to 400°F (about 3 minutes).
  4. Working one at a time, dredge each chop in flour, shaking off excess. Dip in egg wash, letting excess drip off. Press firmly into panko mixture, coating both sides.
  5. Spray air fryer basket with olive oil spray. Place coated chops in a single layer, not overcrowding. Spray tops of chops lightly with oil.
  6. Cook at 400°F for 8 minutes. Flip chops with tongs, spray other side, and cook for another 5-7 minutes until internal temperature reaches 145°F.
  7. While chops cook, make herb butter: In a small bowl, mash together 3 tablespoons softened butter, 2 tablespoons chopped parsley, 1 tablespoon chopped chives, 1 minced garlic clove, and ½ teaspoon lemon zest until well combined.
  8. When chops are done, transfer to a cutting board. Immediately brush each chop with herb butter while hot. Let rest for 3 minutes.
  9. Serve immediately while coating is crispiest.

Notes

Pat pork chops very dry for maximum crispiness. Let coated chops rest 5 minutes before cooking to help coating adhere. Work in batches if needed to avoid overcrowding. Double the herb butter for extra use—it’s great on steak, chicken, or vegetables. For gluten-free, use gluten-free panko and almond flour. For dairy-free, use vegan butter and skip Parmesan (add extra panko and nutritional yeast).
