This creamy, tangy, and slightly spicy buffalo chicken dip is made in the slow cooker with simple ingredients. It’s the perfect game day snack that disappears fast at every party.

Ingredients

Scale
  • 2 cans (12.5 oz each) canned chicken breast, drained
  • 16 ounces cream cheese, softened to room temperature
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 cup ranch dressing
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup crumbled blue cheese (optional)
  • 1 tablespoon dried chives or fresh chopped green onions for garnish
  • Salt and black pepper to taste

Instructions

  1. Prepare the cream cheese: In a mixing bowl, beat the softened cream cheese with a fork or hand mixer until smooth. Add 2 tablespoons of the buffalo sauce and mix until combined.
  2. Shred the chicken: Open the cans of chicken and drain the liquid. Use two forks to shred the chicken into fine pieces.
  3. Layer the ingredients in the slow cooker: Start with the cream cheese mixture at the bottom. Add the shredded chicken on top. Pour the remaining buffalo sauce and ranch dressing over everything. Sprinkle 1 1/2 cups of the shredded cheddar cheese on top. Do not stir yet.
  4. Cook on low: Set the slow cooker to low heat and cook for 2 hours. Do not lift the lid.
  5. Stir and finish: After 2 hours, stir everything together until the cream cheese is fully melted and the dip is smooth. Sprinkle the remaining 1/2 cup of cheddar cheese on top. Cover and cook for another 10 to 15 minutes until the cheese melts.
  6. Add the blue cheese and garnish: If using blue cheese, crumble it over the top. Sprinkle with dried chives or fresh green onions. Give it one final gentle stir or leave as a topping.
  7. Serve immediately: Switch the slow cooker to the warm setting. Serve with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

Let cream cheese sit at room temperature for at least 30 minutes before starting to avoid lumps. For a milder dip, use 3/4 cup buffalo sauce and add an extra 1/4 cup ranch. For more heat, add 1/2 teaspoon cayenne pepper. Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
