Ingredients

Scale
  • 4 cups fresh broccoli florets (about 2 heads of broccoli)
  • 2 cans (10.5 oz each) condensed cheddar cheese soup
  • 1 cup low-sodium chicken or vegetable broth
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup whole milk or heavy cream
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • Pinch of nutmeg (optional)
  • 4 small round sourdough or crusty bread loaves (4–5 inches in diameter)
  • 2 tablespoons olive oil or melted butter

Instructions

  1. Prep your ingredients (10 minutes): Wash and cut broccoli into bite-sized florets. Dice onion finely and mince garlic. Shred block of cheddar cheese. Measure out broth, milk, and spices.
  2. Layer everything in the crockpot (5 minutes): Place broccoli florets, diced onion, and minced garlic in the bottom of the slow cooker. Pour in the two cans of condensed cheddar cheese soup and the cup of broth. Do not stir.
  3. Cook low and slow (3-4 hours on high or 6-7 hours on low): Put the lid on and cook until broccoli is fork-tender and soup is bubbly around the edges.
  4. Add the dairy (5 minutes): Turn crockpot to warm or low. Stir in shredded cheddar cheese, milk (or heavy cream), smoked paprika, black pepper, and nutmeg if using. Stir gently until cheese is fully melted and soup is smooth (about 2-3 minutes).
  5. Prepare the bread bowls (10 minutes): Preheat oven to 375°F (190°C). Using a serrated knife, cut a circle out of the top of each bread loaf to create a lid. Scoop out soft bread inside, leaving a ½-inch thick shell. Brush inside of bread bowls and lids with olive oil or melted butter. Place on a baking sheet and toast for 5-7 minutes until edges are golden and crispy.
  6. Serve immediately: Ladle hot soup into toasted bread bowls. Top with extra shredded cheese, black pepper, and reserved broccoli florets if desired. Serve immediately.

Notes

Shred your own cheese from a block for the smoothest melt. Add cheese at the end off high heat to prevent graininess. For a thicker soup, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in, then cook on high for 15-20 minutes. Soup tastes even better the next day.
