Ingredients

Scale
  • 8 oz sliced turkey breast, lower sodium
  • 6 oz sliced roast beef, lean cut
  • 4 oz prosciutto, thinly sliced
  • 4 oz reduced-fat cheddar cheese, cut into cubes
  • 4 oz part-skim mozzarella pearls
  • 3 oz goat cheese log, plain or herbed
  • 2 tbsp black sesame seeds
  • 1 tbsp poppy seeds (optional)
  • 1 cup whole-grain crackers
  • 1 cup mini rice cakes
  • 1/2 cup pretzel sticks
  • 2 green apples, sliced thin
  • 1 cup red seedless grapes
  • 1 cup cucumber rounds, about 1/4 inch thick
  • 1/2 cup cherry tomatoes, halved
  • 8 pitted black olives
  • 2 tbsp roasted unsalted pumpkin seeds
  • 1 small clementine, peeled and separated into segments
  • 1/2 cup plain nonfat Greek yogurt
  • 1 tsp everything bagel seasoning
  • 1/2 tsp garlic powder

Instructions

  1. In a small ramekin, mix Greek yogurt, everything bagel seasoning, and garlic powder. Set aside.
  2. Wash and dry all fruits and vegetables. Slice apples into thin wedges (about 8 per apple), cut cucumber into rounds, halve cherry tomatoes, and separate clementine into segments. Pat everything dry with paper towels.
  3. Cube reduced-fat cheddar into 1/2-inch pieces. Leave mozzarella pearls whole. Let goat cheese sit at room temperature for 10 minutes to soften.
  4. Roll turkey slices into tight cylinders. Do the same with roast beef. For prosciutto, fold each slice in half lengthwise, then roll into a loose rose shape.
  5. Place the ramekin of Greek yogurt dip in the center of a large round wooden cutting board or serving platter (at least 16 inches in diameter).
  6. Around the dip, arrange cheese cubes, mozzarella pearls, and rolled meats in a rough circle, leaving about 2 inches of space between the dip and this inner ring.
  7. Arrange apple slices, cucumber rounds, grapes, cherry tomatoes, and clementine segments in a larger circle around the inner ring. Place crackers, rice cakes, and pretzel sticks in between the produce, sticking out slightly like spokes.
  8. Mix black sesame seeds and poppy seeds in a small bowl. Using a small spoon, draw lines of seeds radiating outward from the dip ramekin like spokes, making 8 to 10 evenly spaced spokes. Connect the spokes with curved lines to create a web effect, starting close to the center and working outward.
  9. Place black olives on the web at random intervals. For extra creepiness, cut a few olives in half lengthwise and arrange them to look like spiders. Use broken pretzel stick pieces as spider legs if desired.
  10. Sprinkle pumpkin seeds and any remaining sesame seeds over the board for texture. Tuck clementine segments into empty spaces for pops of orange color.

Notes

Keep all produce dry to prevent sogginess. Draw the web last after arranging all ingredients. Use a spoon for seed lines for better control. Don’t overcrowd the board. Let cheeses and meats sit at room temperature for 15 minutes before serving for best flavor.
