  • ⅔ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water

  • 1 cup whole milk
  • ½ cup beer (IPA or pale ale recommended)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. In a large mixing bowl, combine warm water (110°F), brown sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining 2 cups of flour, one cup at a time, mixing until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. (Alternatively, use a stand mixer with dough hook for 4-5 minutes.)
  4. Place dough in a lightly greased bowl, cover with plastic wrap or a towel, and let rise in a warm spot for about 1 hour until doubled in size.
  5. Punch down the risen dough and divide into 4 equal pieces. Roll each piece into a 12-inch long rope. Cut each rope into 1-inch pieces (about 12-15 bites per rope).
  6. Preheat oven to 425°F. Bring 10 cups of water and ⅔ cup baking soda to a boil in a large pot. Working in batches of 8-10 bites, drop them into the boiling water for 20-30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet, spacing 2 inches apart.
  7. Brush each pretzel bite with the beaten egg wash. Sprinkle generously with coarse sea salt.
  8. Bake for 12-15 minutes until deep golden brown. Let cool on baking sheet for 5 minutes before serving.
  9. While pretzel bites bake, make the beer cheese dip: Melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute. Slowly whisk in milk and beer, stirring constantly until thickened (3-4 minutes). Reduce heat to low and gradually add shredded cheddar cheese, stirring until melted and smooth. Stir in Dijon mustard, garlic powder, and cayenne (if using). Season with salt and pepper to taste. Keep warm over low heat.
