A gooey, fudgy pie with toasted pecans, semi-sweet and dark chocolate chips, and a warm bourbon kick. Perfect for Derby parties or any occasion that calls for an impressive yet simple dessert.

Ingredients

Scale
  • 1 (9-inch) unbaked pie crust
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3 large eggs, room temperature
  • 2/3 cup light corn syrup
  • 1/4 cup bourbon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup dark chocolate chips
  • 1 cup chopped pecans, toasted

Instructions

  1. Preheat oven to 375°F (190°C). Position a rack in the lower third of the oven.
  2. Blind bake the pie crust: Place unbaked crust in pie dish, line with parchment or foil, fill with pie weights or dried beans. Bake for 10 minutes. Remove weights and parchment, bake 5 more minutes until bottom looks dry and barely golden. Set aside to cool slightly.
  3. Reduce oven temperature to 350°F (175°C).
  4. Melt butter and let cool slightly.
  5. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  6. Add eggs one at a time, whisking well after each addition.
  7. Mix in corn syrup, bourbon, vanilla extract, and salt until fully combined and smooth.
  8. Gently fold in semi-sweet chocolate chips, dark chocolate chips, and toasted pecans with a rubber spatula.
  9. Place blind-baked crust on a baking sheet. Pour filling into crust.
  10. Bake for 45-55 minutes, until edges are set and puffed but center jiggles slightly when shaken. Tent edges with foil if browning too quickly.
  11. Cool completely on a rack for at least 2-3 hours before slicing.

Notes

Toast pecans at 350°F for 5-7 minutes until fragrant. Do not overmix filling. Let pie cool completely before slicing for clean pieces. Store at room temperature up to 3 days. Freezes well for up to 3 months.
