These no-bake eggnog cheesecake bars are a creamy, spiced holiday dessert that comes together in just 20 minutes of active work. No oven required, just mix, chill, and enjoy a crowd-pleasing treat that tastes like Christmas morning.

Ingredients

Scale
  • 2 cups graham cracker crumbs (about 16 full sheets, crushed)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • Pinch of salt
  • 16 ounces full-fat cream cheese, softened
  • 1 cup full-fat eggnog
  • 1/2 cup powdered sugar
  • 1 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg, plus more for garnish
  • 1/4 teaspoon ground cinnamon
  • 1 cup whipped topping (like Cool Whip), thawed
  • Extra whipped cream for serving (optional)
  • Caramel sauce for drizzling (optional)

Instructions

  1. Make the crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and a pinch of salt. Pour in melted butter and stir with a fork until the crumbs are evenly moistened (like wet sand). Press the mixture firmly into the bottom of a parchment-lined 9×9-inch pan. Use the bottom of a measuring cup to pack it down. Refrigerate while making the filling.
  2. Beat the cream cheese: In a large bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Scrape down the sides of the bowl.
  3. Add the wet ingredients: Add eggnog, powdered sugar, rum extract, vanilla extract, nutmeg, and cinnamon. Beat on low speed until combined, then increase to medium and beat for another minute until smooth and slightly thick.
  4. Fold in the whipped topping: Gently fold in the thawed whipped topping using a spatula. Do not overmix; keep the filling light and fluffy.
  5. Assemble the bars: Pour the filling over the chilled crust and spread evenly with a spatula. Tap the pan gently on the counter to release air bubbles. Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  6. Slice and serve: Once set, lift the bars out of the pan using the parchment overhang. Place on a cutting board and slice into squares with a sharp knife, wiping the knife clean between cuts. Serve cold with whipped cream and a sprinkle of nutmeg.

Notes

For best results, use full-fat cream cheese and eggnog. Chill overnight for clean slices. If in a hurry, freeze for 2-3 hours, then let sit at room temperature for 10 minutes before slicing. Wipe knife clean between cuts for neat edges.
