  • 3 large bell peppers (any colors), sliced into 1/2-inch strips
  • 2 medium yellow onions, sliced into 1/2-inch half-moons
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 46 hoagie rolls or crusty rolls (for serving, optional)
  • Spicy brown mustard or whole grain mustard (for serving, optional)
  • Fresh parsley or chives, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven. Line a large rimmed sheet pan with parchment paper or aluminum foil.
  2. Slice the bell peppers into 1/2-inch thick strips. Cut the onions in half from root to stem, then slice into 1/2-inch half-moons. Mince the garlic.
  3. In a large bowl or directly on the sheet pan, combine the sliced peppers, onions, and minced garlic. Drizzle with olive oil, then add salt, black pepper, smoked paprika, dried oregano, and red pepper flakes (if using). Toss until evenly coated.
  4. Spread the vegetables in a single, even layer on the sheet pan.
  5. Roast the vegetables for 10 minutes.
  6. After 10 minutes, remove the pan from the oven. Use tongs to nestle the sausages into the vegetables, turning them once to coat with oil.
  7. Return to the oven and roast for 15-20 minutes, flipping the sausages halfway through (after about 8-10 minutes) for even browning.
  8. Check for doneness: sausages should reach an internal temperature of 160°F (71°C) or be white and firm when cut. Peppers should be tender and caramelized.
  9. Let the sausages and peppers rest on the pan for 5 minutes before serving.
  10. Serve on hoagie rolls with mustard, or over rice, mashed potatoes, or greens. Garnish with fresh parsley or chives if desired.

Notes

For best results, give the vegetables a 10-minute head start before adding sausages. Cut vegetables uniformly for even cooking. Use a rimmed sheet pan to catch juices. Don’t crowd the pan—use two pans if doubling the recipe. Let sausages rest for 5 minutes after cooking for juicier results. Leftovers keep in the refrigerator for up to 4 days and freeze for up to 3 months.
