Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1 cup canned pumpkin puree (100% pumpkin, not pie filling)
  • 1/2 cup powdered sugar, sifted
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 bag (10-12 oz) mini pretzels
  • 1 cup roasted, salted pecans
  • 1 cup roasted, salted almonds
  • 2 large Honeycrisp or Granny Smith apples, sliced thin and tossed with lemon juice
  • 4 oz sharp white cheddar cheese, cut into small cubes or thin slices
  • 4 oz brie cheese, cut into wedges
  • 2–3 sprigs fresh rosemary (for garnish)
  • Optional: Dried cranberries or figs

Instructions

  1. Make the Pumpkin Spice Dip: In a medium mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula.
  2. Add the Wet Ingredients: Add the pumpkin puree, powdered sugar, brown sugar, and vanilla extract to the bowl. Beat on low speed until combined, then increase to medium and beat for another minute until light and airy.
  3. Add the Spices: Sprinkle in the pumpkin pie spice, cinnamon, and salt. Beat on low until just incorporated. Taste and adjust spices if desired. Transfer the dip to a small serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes.
  4. Prep Your Board Ingredients: While the dip chills, wash and dry the apples. Slice into thin wedges (about 1/4 inch thick) and toss with a squeeze of lemon juice to prevent browning. Slice the brie into wedges and cube the sharp cheddar.
  5. Assemble the Board: Place the bowl of chilled pumpkin dip near the center of a large cutting board or platter, slightly off to one side.
  6. Build Around the Dip: Scatter the pretzels in small clusters around the dip bowl. Add piles of pecans and almonds in different spots. Fan out the apple slices in a curved line along one edge. Place the cheese cubes and brie wedges in remaining empty spaces.
  7. Finishing Touches: Tuck fresh rosemary sprigs between the piles of food. If using dried cranberries or figs, sprinkle them in the gaps for color. Fill any bare spots with extra pretzels or nuts.

Notes

The dip can be made up to 2 days in advance. For best texture, let cream cheese soften at room temperature for 30-45 minutes before mixing. Chill the dip for at least 30 minutes to allow flavors to meld. Toss apple slices with lemon juice to prevent browning. Use a slightly firmer brie so it holds its shape when sliced.
