This easy salted caramel pecan cheesecake is a no-fuss, crowd-pleasing dessert that combines a creamy filling, crunchy pecan topping, and ribbons of salted caramel. Perfect for weeknights or special occasions, it requires no water bath and comes together in under 20 minutes of active prep time.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (about 12 full sheets, crushed finely)
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 24 ounces (three 8-ounce blocks) cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract (pure vanilla)
  • ¼ cup sour cream, room temperature
  • 2 tablespoons all-purpose flour
  • ½ cup store-bought or homemade salted caramel sauce
  • 1 cup pecan halves, roughly chopped
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 325°F (163°C). Grease your 9-inch springform pan with butter or non-stick spray. If you want to be extra careful about leaks, wrap the outside of the pan with a sheet of aluminum foil.
  2. In a small dry skillet over medium heat, toast the chopped pecans for 3-4 minutes, stirring frequently. You’ll know they’re done when they smell nutty and are slightly darker. Watch them carefully — they burn fast! Set them aside to cool.
  3. In a medium bowl, combine the graham cracker crumbs and ¼ cup sugar. Pour in the melted butter and stir with a fork until all the crumbs are moistened. Press the mixture firmly into the bottom of your prepared springform pan. I use the bottom of a measuring cup to get it really compact. Bake for 10 minutes, then remove and let cool slightly while you make the filling.
  4. In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy — about 2 minutes. Add the 1 cup sugar and beat until combined, scraping down the sides as needed. Add the eggs one at a time, beating on low after each addition just until incorporated. Overmixing at this stage adds too much air and can cause cracks. Mix in the vanilla extract, sour cream, and flour until just combined. The batter should be smooth and silky.
  5. Pour the filling over the pre-baked crust and spread it evenly. Drop spoonfuls of the salted caramel sauce over the top — about ⅓ cup total. Use a butter knife or skewer to gently swirl the caramel into the batter. Don’t over-swirl or you’ll lose the distinct ribbons. Sprinkle about half of the toasted pecans over the top.
  6. Place the springform pan on a baking sheet (just in case of any drips) and bake at 325°F for 50-60 minutes. The edges should be set and slightly puffed, but the center should still jiggle slightly when you gently shake the pan. This is the sweet spot — it will continue to set as it cools.
  7. Turn off the oven, crack the door open, and let the cheesecake sit inside for 1 hour. This gradual cooling helps prevent cracks. Then remove it from the oven and run a knife around the edge to loosen it from the pan. Let it cool completely on a wire rack — about another hour.
  8. Cover the pan with plastic wrap and refrigerate for at least 4 hours, but overnight is best. This is the hardest part, I know, but it’s crucial for the perfect texture.
  9. When ready to serve, remove the springform pan sides. Drizzle the remaining caramel sauce over the top, sprinkle with the rest of the toasted pecans, and finish with a pinch of flaky sea salt. Slice with a sharp knife dipped in hot water and wiped dry between cuts for clean slices.

Notes

Make sure cream cheese is at room temperature to avoid lumps. Do not overmix the batter to prevent cracks. For a water bath alternative, place a pan of hot water on the oven rack below the cheesecake. Use thick, spoonable caramel sauce to prevent sinking. Chill overnight for best texture.
