  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 jar (16 oz) salsa
  • 4 cups low-sodium chicken broth
  • 1 packet (1 oz) taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Shredded cheddar cheese (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)

Instructions

  1. Prep your ingredients: Open all cans, drain and rinse beans, drain corn. Measure out spices.
  2. Layer ingredients in the slow cooker: Place chicken breasts in the bottom. Add black beans, pinto beans, corn, diced tomatoes with green chilies, and salsa on top.
  3. Add broth and seasonings: Pour chicken broth over everything. Sprinkle taco seasoning, cumin, chili powder, garlic powder, and onion powder evenly. Stir gently.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and shreds easily.
