Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1½ cups)
  • 4 cloves garlic, minced
  • 1½ pounds lean ground turkey (93% lean)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 cup frozen corn kernels
  • 1 can (4 ounces) diced green chiles
  • Shredded cheddar cheese (for serving, optional)
  • Sour cream or Greek yogurt (for serving, optional)
  • Fresh cilantro, chopped (for serving, optional)
  • Diced avocado (for serving, optional)
  • Lime wedges (for serving, optional)
  • Crushed tortilla chips (for serving, optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 5 minutes, until soft and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.
  2. Add the ground turkey to the skillet with the onions and garlic. Cook for about 3 to 4 minutes, breaking it up with your spoon, until it’s just no longer pink on the outside (it may still be slightly raw in the center).
  3. Sprinkle the chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper over the turkey mixture. Stir well and cook for 1 minute to bloom the spices.
  4. Transfer the turkey mixture to a 6-quart slow cooker.
  5. Add the drained and rinsed kidney beans, black beans, and pinto beans. Pour in the fire-roasted diced tomatoes and crushed tomatoes. Add the frozen corn and diced green chiles. Stir everything together until well combined.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. (LOW for 8 hours is preferred for best flavor.)
  7. About 30 minutes before serving, taste the chili and adjust seasoning as needed (more salt, cumin, cayenne, or a splash of lime juice).
  8. Ladle the chili into bowls and serve with desired toppings: shredded cheddar, sour cream, cilantro, avocado, lime wedges, and crushed tortilla chips.

Notes

For best flavor, cook on LOW for 8 hours. Let chili rest on WARM for 30 minutes before serving. Chili tastes even better the next day. To thicken, remove lid for last 30 minutes or mash some beans against the side of the slow cooker.
