A quick and easy stuffing recipe made with sourdough bread, brown butter, and fresh sage. Perfect for weeknights or holidays, this dish delivers crispy edges and deep, nutty flavor in about 45 minutes.

Ingredients

  • Sourdough bread, cut into 1-inch cubes (about 8 cups)
  • Unsalted butter (6 tablespoons)
  • Fresh sage leaves (about 15-20 leaves)
  • Yellow onion, diced (1 medium)
  • Celery stalks, diced (2 large)
  • Low-sodium chicken or vegetable broth (1 ½ cups)
  • Large eggs, lightly beaten (2)
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C). Spread sourdough cubes on a baking sheet; if fresh, dry in oven for 5-7 minutes.
  2. In a large skillet over medium heat, melt 6 tablespoons unsalted butter. Cook until it foams, subsides, and turns light amber (about 3-4 minutes). Remove from heat immediately.
  3. Drop about 10 whole sage leaves into the hot brown butter; they will crisp in 15-20 seconds. Transfer to a paper towel-lined plate for garnish.
  4. Return skillet to medium heat. Add diced onion and celery; cook 5-6 minutes until softened and translucent. Add remaining chopped sage leaves; cook 1 minute more.
  5. Place dried sourdough cubes in a large bowl. Pour hot brown butter mixture over cubes; toss gently to coat evenly.
  6. In a small bowl, whisk together 1 ½ cups broth and 2 lightly beaten eggs. Pour over buttered bread cubes; toss until evenly moistened. Season with ½ teaspoon salt and ¼ teaspoon pepper; toss again.
  7. Transfer mixture to a greased 9×13-inch baking dish; spread evenly without pressing down.
  8. Bake for 25-30 minutes until top is golden brown and edges are crispy. For extra browning, broil 1-2 minutes at the end.
  9. Remove from oven; let rest 5 minutes. Crumble reserved crispy sage leaves over top before serving.

Notes

Use day-old or slightly stale sourdough for best texture. Brown butter over medium heat to avoid burning. Season in layers for maximum flavor. If mixture looks dry, add extra ¼ cup broth; if soupy, add more bread cubes. Always beat eggs before adding.
