Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 pounds total)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • ⅓ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • ½ teaspoon red pepper flakes
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 400°F with rack in upper third position.
  2. Pat chicken thighs dry with paper towels. Season both sides with salt and pepper. Let sit at room temperature for 10 minutes.
  3. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, and red pepper flakes. Set aside. In another small bowl, mix cornstarch and water until smooth.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering. Place chicken skin-side down, without crowding. Cook undisturbed for 5-6 minutes until skin is deep golden brown and crispy.
  5. Flip chicken using tongs. Cook for another 4 minutes on the second side. Pour off all but 1 tablespoon of rendered fat.
  6. Pour honey garlic sauce over chicken, swirling to distribute. Bring to a gentle simmer, then reduce heat to medium-low. Let bubble for 2-3 minutes, spooning sauce over chicken.
  7. Transfer skillet to oven and bake for 15-18 minutes, until chicken reaches internal temperature of 165°F.
  8. Remove from oven and set skillet on stovetop over medium heat. Stir in cornstarch slurry and let simmer for 1-2 minutes until sauce is glossy and thickened. Taste and adjust seasoning.
  9. Optional: Switch oven to broil for last 2 minutes for extra caramelization. Watch carefully to prevent burning.
  10. Let chicken rest for 5 minutes before serving. Sprinkle with green onions, sesame seeds, and cilantro if using.

Notes

Pat chicken dry for crispy skin. Watch honey under broiler to prevent burning. Use an instant-read thermometer for best results. Sauce thickens as it sits; add water when reheating.
