A quick and easy strawberry shortcake trifle made for two, featuring tender homemade shortcake, juicy balsamic-macerated strawberries, and fluffy whipped cream. Perfect for a romantic date night or a cozy evening in.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • ⅓ cup whole milk (cold)
  • ½ teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, hulled and sliced (about 8 medium berries)
  • 2 tablespoons granulated sugar (for strawberries)
  • 1 teaspoon balsamic vinegar
  • ¼ teaspoon vanilla extract (for strawberries)
  • ¾ cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract (for cream)
  • Extra strawberry slices and mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the shortcake dough: In a medium bowl, whisk together 1 cup flour, 2 tablespoons sugar, 1 ½ teaspoons baking powder, and ¼ teaspoon salt. Add the cold butter cubes and use a pastry cutter or your fingertips to work the butter into the flour until it looks like coarse crumbs with some pea-sized butter pieces remaining.
  3. Add the wet ingredients: Pour in ⅓ cup cold milk and ½ teaspoon vanilla. Stir with a fork just until the dough comes together. It will be shaggy and a little sticky.
  4. Shape and bake the shortcake: Turn the dough onto a lightly floured surface and pat it into a circle about ½ inch thick. Use a 2-inch biscuit cutter or a glass to cut out 4 rounds. Place them on the prepared baking sheet about 2 inches apart. Bake for 12-14 minutes until golden brown on top and slightly firm to the touch. Let them cool on the sheet for 5 minutes, then transfer to a wire rack.
  5. While the shortcake bakes, macerate the strawberries: In a small bowl, combine the sliced strawberries, 2 tablespoons sugar, 1 teaspoon balsamic vinegar, and ¼ teaspoon vanilla. Stir gently to coat. Let them sit at room temperature for at least 15 minutes, stirring once halfway through.
  6. Whip the cream: In a medium bowl (chill it for 5 minutes in the freezer if you have time), pour ¾ cup cold heavy cream. Add 2 tablespoons powdered sugar and ½ teaspoon vanilla. Whisk vigorously by hand or use an electric mixer on medium-high speed until soft peaks form.
  7. Assemble the trifles: Once the shortcake biscuits are cool enough to handle, crumble or cut them into 1-inch cubes. Divide half the cake cubes between two trifle dishes. Spoon half the macerated strawberries (including the syrup) over the cake. Add a layer of whipped cream—about a third of what you made. Repeat the layers: remaining cake cubes, remaining strawberries, and finish with the rest of the whipped cream on top.
  8. Garnish and serve: Top each trifle with a fresh strawberry slice and a small mint leaf if desired. Serve immediately for the best texture.

Notes

For best texture, serve within an hour of assembly. The cake absorbs the strawberry syrup and becomes tender, but if it sits too long it can become soggy. To prep ahead, make the shortcake and macerate the strawberries separately, then whip the cream and assemble just before serving. Keep all ingredients cold for best results. Don’t skip the balsamic vinegar—it enhances the strawberry flavor without tasting like vinegar.
