Ingredients

Scale
  • 1 (8-ounce) wheel of Brie cheese
  • 4 ounces sharp white cheddar
  • 4 ounces creamy goat cheese log
  • 1 large Honeycrisp or Fuji apple, sliced thin
  • 1 large Bosc pear, sliced thin
  • 1/2 cup dried figs
  • 1/2 cup pomegranate arils
  • 1/3 cup candied pecans
  • 1/3 cup Marcona almonds
  • 1/4 cup honey
  • Fresh rosemary sprigs for garnish
  • 1 baguette, sliced and lightly toasted
  • Assorted crackers

Instructions

  1. Preheat oven to 350°F (175°C). Place the wheel of brie on a small oven-safe dish or parchment paper on a baking sheet. Optionally score the top rind in a crosshatch pattern. Bake for 10-12 minutes until puffy and soft. Let rest for 5 minutes.
  2. While brie bakes, core and thinly slice the apple and pear (about 1/4-inch thick). Arrange in a fan shape on one side of the board.
  3. Slice the sharp cheddar into thin triangles or cubes. Crumble the goat cheese into small pieces. Place in clusters on the board, leaving a central spot for the warm brie.
  4. Place the warm brie in the center of the board. Arrange sliced baguette and crackers in one area. Add dried figs and pomegranate arils in small piles. Scatter candied pecans and Marcona almonds in empty spaces.
  5. Drizzle the warm brie generously with honey. Garnish with fresh rosemary sprigs. Serve immediately.

Notes

Don’t overbake the brie; it should be puffy and soft, not liquid. Let hard cheese come to room temperature for best flavor. Prep fruit and hard cheese a few hours ahead, but add warm brie and crunchy elements just before serving.
