  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • 1 tablespoon (15ml) lemon juice
  • ½ teaspoon vanilla extract
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • ½ cup (50g) chopped pecans or walnuts (optional)
  • 1 cup (200g) granulated sugar (for caramel)
  • 6 tablespoons (90ml) unsalted butter, cut into pieces (for caramel)
  • ½ cup (120ml) heavy cream, warmed (for caramel)
  • 1 teaspoon flaky sea salt (for caramel)
  • 1 teaspoon vanilla extract (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Make the apple filling: In a large mixing bowl, combine sliced apples, granulated sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until apples are evenly coated. Let sit for 5 minutes.
  3. Prepare the oat streusel topping: In a medium bowl, whisk together rolled oats, all-purpose flour, brown sugar, and salt. Pour melted butter over dry ingredients and stir with a fork until clumps form. Fold in nuts if using. Set aside.
  4. Make the salted caramel sauce: In a small, heavy-bottomed saucepan, spread granulated sugar in an even layer. Heat over medium heat, swirling the pan gently, until sugar melts and turns a deep amber color (about 5-7 minutes). Remove from heat.
  5. Carefully whisk in butter pieces (mixture will bubble). Slowly pour in warmed heavy cream while whisking constantly. Stir in flaky sea salt and vanilla extract. Let cool for 5 minutes.
  6. Assemble the crisp: Spread apple filling evenly in prepared dish. Pour about half of the caramel sauce over apples. Sprinkle oat streusel topping evenly over apples.
  7. Bake for 40-45 minutes, until filling is bubbly and streusel is golden brown. If topping browns too quickly, tent with foil for last 10 minutes.
  8. Cool on a wire rack for at least 15 minutes. Drizzle remaining caramel sauce over top before serving. Serve warm, preferably with vanilla ice cream.

Notes

For best results, use a mix of tart and sweet apples. Let the crisp rest for 15-20 minutes after baking to allow the filling to set. The caramel can be made ahead and stored in the refrigerator.
