Ingredients

Scale
  • 8 ounces dried figs, stemmed and chopped
  • 1/2 cup honey
  • 2 tablespoons balsamic vinegar
  • 1 sprig fresh rosemary
  • 1/4 cup water
  • Pinch of salt
  • 6 ounces prosciutto, thinly sliced
  • 6 ounces salami (Genoa or soppressata), thinly sliced
  • 6 ounces sharp cheddar cheese
  • 8 ounces brie cheese
  • 4 ounces manchego cheese
  • 1 cup red grapes
  • 1 cup sliced apples or pears
  • 1/2 cup toasted almonds or walnuts
  • 8 ounces mixed crackers and sliced baguette
  • 1/2 cup cornichons or pickled vegetables
  • 1/2 cup mixed olives (kalamata and green)
  • Optional: dried apricots or dates
  • Optional: dark chocolate squares
  • Optional: fresh herbs for garnish

Instructions

  1. Make the honey and fig jam: In a small saucepan, combine chopped dried figs, honey, balsamic vinegar, water, and rosemary sprig. Bring to a gentle simmer over medium heat, then reduce heat to low. Cook for about 15 minutes, stirring occasionally, until figs are soft and mixture has thickened. Remove rosemary sprig and let cool for 5 minutes. Transfer to a small bowl.

Shave manchego into thin ribbons using a cheese plane or vegetable peeler. Wash and dry grapes. Slice apples or pears just before serving. Toast nuts in a dry skillet over medium heat for 3-4 minutes until fragrant, then let cool.
  3. Assemble the board: Place the bowl of honey and fig jam in the center of a large wooden cutting board or serving platter. Arrange cheeses around the jam bowl. Fold prosciutto into loose ribbons or rosettes and place in clusters. Fold salami slices in half twice to create small triangles. Fill gaps with crackers and bread slices. Scatter grapes, apple or pear slices, and dried fruit around the board. Place olives and cornichons in small bowls or directly on the board. Sprinkle toasted nuts in rem…

Notes

Take cheeses out of refrigerator 30 minutes before serving for best flavor. The jam can be made up to a week in advance. If jam is too thick after cooling, stir in a teaspoon of warm water. If too thin, simmer for 2-3 more minutes. Don’t overcrowd the board; leave breathing room between items. For a vegetarian version, omit meats and double up on cheeses, nuts, and fruit.
