Ingredients

Scale
  • 2 ½ cups (280g) blanched almond flour
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ teaspoon salt
  • Optional: ½ cup (60g) powdered sugar for dusting or glaze

Instructions

  1. Cream the butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy—about 2-3 minutes with a hand mixer on medium speed. Scrape down the sides of the bowl once or twice.
  2. Add the wet ingredients: Beat in the egg, vanilla extract, and almond extract until fully combined. The mixture might look slightly curdled—that’s normal.
  3. Mix in the dry ingredients: Add the almond flour and salt. Mix on low speed (or stir by hand) until a soft, slightly sticky dough forms. Be careful not to overmix.
  4. Chill the dough: Wrap the dough tightly in plastic wrap and flatten it into a disk. Refrigerate for at least 1 hour, or up to 3 days.
  5. Preheat and prep: When ready to bake, preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  6. Roll out the dough: Lightly dust your work surface with a little almond flour or place the dough between two sheets of parchment paper. Roll to about ¼-inch (6mm) thickness.
  7. Cut out the shapes: Dip your cookie cutters in a little almond flour to prevent sticking. Press firmly and lift straight up. Re-roll the scraps once.
  8. Bake: Place cookies about 1 inch apart on the prepared baking sheets. Bake for 8-10 minutes, or until the edges are just barely golden. The centers will look slightly underdone—that’s perfect.
  9. Cool completely: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Decorate (optional): Once completely cool, decorate with royal icing, a simple powdered sugar glaze, or just a dusting of powdered sugar. Let decorations set fully before stacking or storing.

Notes

Chilling the dough is non-negotiable to prevent spreading. Watch bake time closely—almond flour cookies brown quickly. Use room temperature ingredients for best results. Do not overmix the dough. For dairy-free, use a high-quality vegan butter stick. Cookies taste even better the next day.
