  • 1/2 cup (120ml) milk of your choice (e.g., unsweetened almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium ripe banana
  • 2 tablespoons (32g) natural peanut butter (creamy or crunchy)
  • 1 tablespoon (15ml) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana: In your jar or container, add the peeled banana. Use a fork to mash it until mostly smooth with a few small lumps (about 30 seconds).
  2. Add the wet ingredients: Pour in the milk, Greek yogurt, peanut butter, honey or maple syrup (if using), and vanilla extract.
  3. Add the dry ingredients: Add the rolled oats, chia seeds, and a pinch of salt. Give it a quick stir with your fork to start combining.
  4. Shake it up: Screw the lid on tightly. Shake the jar vigorously for about 30 seconds until everything is well combined. Scrape down any peanut butter stuck to the sides and shake again if needed.
  5. Refrigerate overnight: Place the jar in the refrigerator for at least 4 hours, but overnight is best (8-12 hours).
  6. Add toppings and serve: In the morning, give the oats a good stir. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, cinnamon, or other desired toppings. Eat cold or microwave for 30-60 seconds if you prefer warm oats.

Notes

Use rolled oats for best texture—quick oats get mushy, steel-cut oats stay too hard. Mash the banana thoroughly for even sweetness. Shaking incorporates air for a lighter texture. The oats taste even better on day 2 or 3 as flavors meld. Add toppings just before eating to prevent browning or sogginess. For warm oats, microwave without lid for 60-90 seconds.
