These buttery, almond-flavored spritz cookies are quick and easy to make with a cookie press. Perfect for holiday baking with kids, they’re a crowd-pleasing treat that’s ready in under 30 minutes.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 ½ cups powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon almond extract
  • Food coloring (optional)
  • Sprinkles or sanding sugar

Instructions

  1. Preheat oven to 375°F (190°C). Do not grease baking sheets.
  2. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes. Scrape down sides halfway through.
  3. Beat in egg yolk, vanilla extract, and 1 teaspoon almond extract until well combined.
  4. In a separate bowl, whisk together flour and salt. Gradually add to wet mixture on low speed, mixing just until dough comes together. Do not overmix.
  5. Fit cookie press with desired disk. Fill press with dough according to manufacturer’s instructions.
  6. Hold press perpendicular to ungreased baking sheet. Press firmly, then lift straight up. Space cookies about 2 inches apart.
  7. Bake for 7-9 minutes, until edges are just barely golden brown. Centers should still look pale and set.
  8. Let cookies cool on baking sheet for 2 minutes, then transfer to wire rack to cool completely before icing.
  9. For icing: Whisk together powdered sugar, 2 tablespoons milk, and ½ teaspoon almond extract. Add more milk if needed for drizzling consistency. Add food coloring if desired.
  10. Drizzle icing over cooled cookies and top with sprinkles or sanding sugar. Let icing set for about 30 minutes before stacking or serving.

Notes

Dough temperature is key: if too cold, it won’t stick to pan; if too warm, it will be sticky. For cleanest shapes, press and lift straight up without twisting. Do not overbake; cookies should be pale on bottom. Un-iced cookies can be frozen for up to 3 months.
