These smoky sea salt pumpkin seeds are a quick and easy homemade snack that’s perfect for lunchboxes and parties. With a perfect crunch and addictive smoky flavor, they’re a crowd-pleaser that disappears fast.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (from one medium pumpkin, rinsed and dried)
  • 1 ½ tablespoons olive oil (or avocado oil)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon flaky sea salt (like Maldon)
  • ¼ teaspoon black pepper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper if desired.
  2. Rinse the pumpkin seeds thoroughly in a colander under cold water, removing any pulp. Pat dry with a towel and let air-dry for 5-10 minutes.
  3. In a mixing bowl, combine the dried pumpkin seeds, olive oil, smoked paprika, garlic powder, onion powder, and black pepper. Toss until every seed is coated.
  4. Spread the seeds in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  5. Roast for 10 minutes, then remove the pan and stir the seeds.
  6. Roast for another 8-12 minutes, until golden brown and fragrant. Watch closely to avoid burning.
  7. Immediately sprinkle with flaky sea salt. Let cool completely on the baking sheet (about 15 minutes) before serving.

Notes

For best crunch, ensure seeds are completely dry before roasting. Store in an airtight container at room temperature for up to 2 weeks. Re-crisp in a 300°F oven for 5 minutes if needed.
