Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (120g) fresh or frozen cranberries
  • 1/2 cup (85g) white chocolate chips
  • 1/2 cup (85g) white chocolate chips (for drizzle)
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly spray the parchment with non-stick spray.
  2. In a large microwave-safe bowl, melt the butter in 30-second intervals, stirring between each. Let it cool for a minute or two.
  3. Add the brown sugar to the melted butter and whisk until combined, about 30 seconds.
  4. Add the egg and vanilla extract. Whisk vigorously for about 1 minute until the mixture is lighter in color and slightly thicker.
  5. In a separate small bowl, whisk together the flour, baking powder, and salt.
  6. Pour the dry ingredients into the wet mixture. Fold gently with a spatula until just combined (a few streaks of flour are okay).
  7. Fold in the cranberries and 1/2 cup of white chocolate chips until evenly distributed.
  8. Scrape the batter into the prepared pan and spread it evenly. The batter will be thick.
  9. Bake on the middle rack for 22-26 minutes. The edges should be golden brown and the center should still look soft and slightly underdone. A toothpick inserted in the center should come out with a few moist crumbs.
  10. Let the blondies cool in the pan on a wire rack for at least 30 minutes. Then use the parchment handles to lift them out and transfer to the rack to cool completely, about another 30 minutes.
  11. Once completely cool, combine the remaining 1/2 cup of white chocolate chips and 1 teaspoon of oil in a small microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth (about 40-60 seconds total). Drizzle over the blondies using a fork or spoon in zigzag patterns.
  12. Let the drizzle set for about 15-20 minutes (or 10 minutes in the fridge). Then slice into 16 squares and serve.

Notes

Don’t overbake; the center should look slightly underdone. Use room temperature ingredients for best results. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking blend. For dairy-free, use vegan butter and dairy-free white chocolate chips. The blondies taste even better the next day.
