  • 1 cup pumpkin puree (100% pure pumpkin)
  • 1/2 cup heavy cream
  • 1/3 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon pumpkin pie spice (or 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 8 ounces mild cheddar cheese, cut into small cubes or stars
  • 8 ounces string cheese, pulled apart into strips
  • 6 ounces turkey pepperoni
  • 1 cup seedless red grapes, washed and left on small stems
  • 2 medium apples (Honeycrisp or Gala), sliced thin and tossed with lemon juice
  • 1 cup baby carrots
  • 1 cup pretzel sticks
  • 1/2 cup popcorn (plain or lightly salted)
  • 1/4 cup honey (optional, for drizzling)
  • Small handful of fresh rosemary sprigs (for decoration, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with butter or non-stick spray.
  2. In a medium bowl, whisk together pumpkin puree, heavy cream, brown sugar, egg, pumpkin pie spice, vanilla extract, and salt until smooth. Set aside.
  3. Roll out the refrigerated pie crust on a lightly floured surface to about 1/8-inch thick. Use a 2-inch round cookie cutter to cut out 12 circles. Gently press each circle into a muffin cup, ensuring the dough comes up the sides slightly.
  4. Spoon about 1 1/2 tablespoons of pumpkin filling into each crust. Bake for 18-20 minutes, until filling is set and edges are lightly golden. Cool in pan for 5 minutes, then transfer to a wire rack.
  5. While pies bake, wash and prep board ingredients: slice apples and toss with lemon juice, pull string cheese into strips, cut cheddar into cubes or shapes, wash grapes, and arrange turkey pepperoni in a pile.
  6. Place a large board or baking sheet on the counter. Put small ramekins in strategic spots for honey, popcorn, and extra pretzels.
  7. Arrange larger items: pile cheese cubes in one corner, apple slices in another, and grapes in a cluster. Fill gaps with baby carrots, pretzel sticks, and turkey pepperoni. Tuck string cheese strips and rosemary sprigs around edges for color.
  8. Place cooled mini pumpkin pies in a row or cluster in the center or at one end. Add final touches: drizzle honey over apple slices or sprinkle cinnamon on pies. Serve immediately.

Notes

For best results, use room temperature egg and cream for the filling. Toss apple slices with lemon juice to prevent browning. Let mini pumpkin pies cool completely before assembling the board to avoid wilting fruit. Double the pie recipe for larger crowds.
