Ingredients

Scale
  • 8 oz goat cheese log (soft, plain variety works best)
  • 1/2 cup candy corn (crushed slightly)
  • 1 tablespoon honey (optional)
  • 1 cup cheddar cheese, cut into triangles or small cubes
  • 1 cup mozzarella pearls
  • 8 oz salami or pepperoni slices (optional)
  • 1 cup red grapes (seedless, washed and dried)
  • 1 cup orange bell pepper, sliced into strips
  • 1/2 cup cherry tomatoes (halved if serving to very young kids)
  • 1 cup apple slices (tossed in lemon juice to prevent browning)
  • 1 cup pretzel sticks
  • 1 cup pumpkin-shaped crackers or any fall-shaped snack crackers
  • 1/2 cup popcorn (plain or lightly salted)
  • Edible googly eyes (optional)
  • Black licorice strings (optional)
  • Mini marshmallows (optional)

Instructions

  1. Make the candy corn cheese first. Take your goat cheese log out of the fridge about 10 minutes before you start. Place the candy corn in a zip-top bag and crush it with a rolling pin until you have a mix of fine powder and small chunks. Roll the goat cheese log in the crushed candy corn, pressing gently so it sticks. If using honey, drizzle it over the log before rolling. Set aside on a small plate or in a ramekin.
  2. Prep your fruits and veggies. Wash the grapes and cherry tomatoes, then pat them dry. Slice the bell pepper into thin strips. Cut the apple slices and toss them in a little lemon juice to keep them from turning brown. Set everything aside in separate bowls.
  3. Cut the cheese. Slice your cheddar into triangles or small cubes. For a fun Halloween touch, use a small cookie cutter to make pumpkin or bat shapes. Mozzarella pearls can stay whole.
  4. Arrange the board. Start by placing the candy corn cheese in the center or slightly off to one side. Arrange the other cheeses around it in small clusters.
  5. Add the meats and crackers. Fold the salami slices into quarters and tuck them between the cheese clusters. Scatter the pretzel sticks and pumpkin crackers around the board.
  6. Fill in with fruits and veggies. Tuck the grapes, bell pepper strips, cherry tomatoes, and apple slices into the empty spaces. The goal is to cover the board so you can’t see the surface underneath.
  7. Add the decorative touches. If using edible googly eyes, place them on the cheese cubes or salami slices. Arrange the black licorice strings to look like spider webs. Scatter mini marshmallows around.
  8. Serve immediately or refrigerate. This board is best served within an hour of assembly. If making ahead, cover loosely with plastic wrap and refrigerate for up to 4 hours. Take it out 15 minutes before serving.

Notes

Crush the candy corn in batches for even texture. Don’t skip the honey—it helps the candy corn stick to the goat cheese. Use room temperature cheese for easier handling. Keep the candy corn cheese separate from moist ingredients to prevent the coating from getting sticky. Let kids help arrange the board to encourage them to eat more.
