A creamy, scoopable peanut butter smoothie bowl that comes together in just five minutes. Made with frozen bananas and simple pantry ingredients, this healthy breakfast tastes like a treat without the sugar crash.

Ingredients

Scale
  • 2 large ripe bananas, peeled and frozen
  • 2 tablespoons creamy peanut butter
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon chia seeds or flaxseed meal (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/4 cup granola (for topping)
  • 1/2 banana, sliced (for topping)
  • 1 tablespoon peanut butter, drizzled (for topping)
  • 1 tablespoon cacao nibs or dark chocolate chips (for topping)
  • 1 tablespoon unsweetened shredded coconut (for topping)

Instructions

  1. Prep your toppings first. Slice half a banana into thin rounds. Measure out your granola, cacao nibs, and shredded coconut. Warm 1 tablespoon of peanut butter in a small dish for 10 seconds in the microwave—it should be drizzly but not hot. Set everything aside within arm’s reach.
  2. Add the frozen bananas to your blender. Break them into chunks if they’re stuck together. Add the peanut butter, almond milk, chia seeds (if using), vanilla extract, and a pinch of sea salt. The order matters a little—liquid on the bottom helps things blend more smoothly.
  3. Blend on low speed first, then increase to high. Start at low speed for about 15 seconds to break up the bananas, then crank it up to high. You’ll need to stop and scrape down the sides with your spatula at least once—maybe twice. The mixture should look thick and creamy, like soft-serve ice cream. If it’s too thick to blend, add another tablespoon of almond milk. If it’s too thin, add a few ice cubes or another small frozen banana.
  4. Scrape and check the texture. The total blending time is usually 45 seconds to 1 minute. You’re looking for a smooth, scoopable consistency—not runny, but not so thick that you can’t get a spoon through it. The blender should sound like it’s working but not struggling. If your blender starts to smell hot, stop and let it rest for a minute before continuing.
  5. Transfer to a bowl immediately. Use your spatula to scrape every last bit of that creamy goodness into a shallow bowl. Work quickly—this melts faster than you’d think.
  6. Add your toppings. Arrange the banana slices in a neat row or scatter them artfully—your call. Sprinkle granola, cacao nibs, and shredded coconut over the top. Drizzle the warmed peanut butter in a zigzag pattern. Eat immediately.

Notes

Banana ripeness is key—use spotty, overripe bananas for the best sweetness and creaminess. Don’t over-blend or the mixture will become thin. For a thicker bowl, chill your bowl in the freezer for 10 minutes before adding the smoothie. If you don’t have a high-speed blender, let frozen bananas sit on the counter for 5 minutes to soften before blending.
