These Light & Easy Cranberry Feta Pinwheels are a quick, crowd-pleasing appetizer made with light cream cheese, tangy feta, and sweet dried cranberries. Ready in just 15 minutes of active prep, they’re perfect for parties, game days, or a simple snack that feels fancy.

Ingredients

Scale
  • 8 oz light cream cheese, softened to room temperature
  • 1/2 cup crumbled feta cheese
  • 1/3 cup dried cranberries, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper, freshly ground
  • Pinch of salt
  • 4 large flour tortillas (8-inch, burrito-style)

Instructions

  1. Soften the cream cheese: Take it out of the fridge about 30 minutes before starting. If forgotten, microwave on low power for 10-15 seconds until soft but not melted.
  2. Mix the filling: In a medium bowl, combine softened cream cheese, crumbled feta, chopped cranberries, parsley, chives, garlic powder, pepper, and a tiny pinch of salt. Stir until evenly distributed. Taste and adjust seasoning.
  3. Spread the filling: Lay one tortilla flat on a cutting board. Using a spatula or the back of a spoon, spread about 1/4 of the filling evenly over the tortilla, going all the way to the edges. Layer should be about 1/4 inch thick.
  4. Roll it up tight: Starting at one edge, roll the tortilla into a tight log, using fingers to keep it snug. Avoid squeezing too hard to prevent filling from oozing out.
  5. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Roll it up tightly, twisting the ends like a candy wrapper. Repeat with remaining tortillas and filling. Place wrapped rolls on a baking sheet or plate and refrigerate for at least 30 minutes (1 hour is better, overnight works too).
  6. Slice and serve: When ready to serve, unwrap one roll at a time. Using a sharp knife, slice off the ends (about 1/2 inch from each edge). Then slice the rest into 1-inch rounds. Arrange on a platter and serve chilled or at room temperature.

Notes

For best results, ensure cream cheese is fully softened. Chill time is non-negotiable for clean slicing. If tortillas are dry, microwave between damp paper towels for 10-15 seconds. Uncut rolls can be stored in the refrigerator for up to 3 days or frozen for up to 1 month. Flavors improve after a day in the fridge.
