Ingredients

Scale
  • 8 oz Brie cheese wheel
  • 6 oz Aged cheddar, sliced thin
  • 4 oz Goat cheese log
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Salami (mild Genoa), sliced into thin rounds
  • 2 medium Green apples, sliced thin
  • 1 cup Red grapes, washed and stemmed
  • ½ cup Dried figs (no added sugar)
  • ½ cup Roasted red peppers (jarred), drained and sliced
  • ½ cup Toasted almonds
  • ¼ cup Pumpkin seeds
  • 20 Crackers (assorted, e.g., water crackers and seeded crackers)
  • 1 small Baguette, sliced into thin rounds and lightly toasted (optional)
  • 2 tablespoons Honey
  • 3 tablespoons Fig jam or apricot preserves
  • ½ cup Mixed olives
  • Fresh rosemary sprigs for garnish

Instructions

  1. Prep your ingredients (5 minutes). Slice the brie into thin wedges or leave it whole. Slice the aged cheddar into thin triangles. Crumble or slice the goat cheese into rounds. Thinly slice the prosciutto into ribbons or leave in folded pieces. Slice the salami into thin rounds. Wash and slice the apples, tossing with lemon juice to prevent browning. Wash and stem the grapes. Drain and slice the roasted red peppers. Toast the almonds in a dry pan over medium heat for 2-3 minutes until fragrant.
  2. Arrange the cheeses first (3 minutes). Place the brie on the left third of the board. Put the cheddar slices next to it, slightly overlapping. Add the goat cheese in the center or on the right side. Space them out for easy access.
  3. Add the meats (2 minutes). Fold the prosciutto into loose ribbons and place near the brie. Fan out the salami slices near the cheddar. The meats should create a visual bridge between cheeses and other ingredients.
  4. Place the fruits and vegetables (3 minutes). Scatter apple slices in small clusters around the board. Add grapes in little groups near each cheese type. Tuck dried figs between cheese and meat sections. Place roasted red pepper strips in a small pile or bowl.
  5. Add the crunchy elements (2 minutes). Fill small bowls with toasted almonds and pumpkin seeds. Place bowls in empty spots. Arrange crackers and baguette slices around the edges, fanning them out slightly.
  6. Finish with sweet and savory touches (2 minutes). Put fig jam or apricot preserves in a small bowl. Drizzle honey over brie or goat cheese. Scatter olives in a small bowl or directly on the board. Garnish with fresh rosemary sprigs.
  7. Final check and serve (1 minute). Step back and look at the board. Fill any empty gaps with extra crackers, nuts, or fruit. Ensure colors are balanced. Serve immediately at room temperature. If prepping ahead, cover with plastic wrap and refrigerate, but let sit out for 20 minutes before serving.

Notes

Temperature matters: serve cheese at room temperature (68-72°F). Take everything out of the fridge 20-30 minutes before serving. Don’t overcrowd the board; leave about 20% empty. Slice things thin for better texture and presentation. Prep all ingredients before arranging. Check for dietary restrictions and add gluten-free options if needed.
