A lighter, healthier version of the classic Starbucks Peppermint Mocha that’s ready in under 10 minutes. Made with almond milk, cocoa powder, and maple syrup, this copycat recipe delivers rich chocolate and refreshing peppermint flavors without the sugar overload.

Ingredients

Scale
  • 1 cup (240 ml) unsweetened almond milk
  • 2 tablespoons (10 g) unsweetened cocoa powder (Dutch-processed preferred)
  • 1 tablespoon (15 ml) pure maple syrup
  • 1/4 teaspoon peppermint extract
  • Pinch of sea salt
  • 1 shot (about 30 ml) strong brewed espresso or 1/2 cup (120 ml) strongly brewed coffee
  • 2 tablespoons (30 ml) unsweetened almond milk (for frothing)
  • Optional: crushed candy cane or cacao nibs for garnish

Instructions

  1. Brew your coffee or espresso. While it’s brewing, add the almond milk, cocoa powder, maple syrup, peppermint extract, and sea salt to a small saucepan. Whisk everything together until the cocoa powder is fully incorporated.
  2. Heat the mixture over medium heat. Stir occasionally with a whisk. You’re looking for small bubbles around the edges, not a full boil. This takes about 3-4 minutes.
  3. Meanwhile, froth your extra almond milk. Pour the 2 tablespoons of almond milk into a small cup or directly into your frother. Froth until it doubles in volume and looks like soft, billowy clouds. Set aside.
  4. Pour the brewed coffee into your mug. If you’re using espresso, pour it in first. If you’re using regular coffee, fill the mug about halfway.
  5. Pour the hot chocolate-almond milk mixture over the coffee. Stir gently to combine.
  6. Top with the frothed almond milk. Spoon it on top gently so it floats. For a layered effect, hold a spoon upside down over the mug and pour the milk over the back of the spoon.
  7. Garnish if desired with crushed candy cane or cacao nibs.

Notes

Don’t skip the salt—it reduces bitterness and enhances chocolate flavor. Keep the almond milk at a gentle simmer to avoid separation. For a stronger peppermint kick, add the extract right before serving. The chocolate-almond milk base can be made ahead and stored in the fridge for up to 3 days.
