A quick and easy appetizer featuring warm, gooey brie topped with tart cranberries and aromatic rosemary honey. Perfect for holiday parties or last-minute gatherings, this lighter version skips the puff pastry and lets the cheese shine.

Ingredients

Scale
  • 1 wheel (8 ounces or 225 grams) brie cheese
  • ½ cup (120 ml) fresh or frozen cranberries
  • 3 tablespoons (60 grams) honey
  • 1 tablespoon (15 ml) water
  • 1 teaspoon fresh rosemary, finely chopped
  • Pinch of sea salt
  • Optional: 1 teaspoon balsamic vinegar
  • Optional: Crackers, sliced baguette, apple slices, or pear slices for serving

Instructions

  1. Preheat your oven to 350°F (175°C). While it’s heating, take the brie out of the fridge. Let it sit at room temperature for about 10 minutes.
  2. Make the cranberry topping. In a small saucepan, combine the cranberries, 1 tablespoon of honey, and the water. Place over medium heat. Cook for 3-4 minutes, stirring occasionally, until the cranberries start to soften and pop. Remove from heat and stir in half the chopped rosemary. Set aside.
  3. Prepare the brie. Using a sharp knife, score the top rind of the brie in a crosshatch pattern—about ¼ inch deep. Place the brie in your oven-safe dish.
  4. Add the honey and rosemary. Drizzle the remaining 2 tablespoons of honey over the top of the brie, letting it settle into the scored lines. Sprinkle the remaining chopped rosemary over the top. Add a tiny pinch of sea salt.
  5. Bake the brie. Place the dish in the preheated oven. Bake for 10-12 minutes, until the brie is soft and puffy but not completely collapsed.
  6. Add the cranberries. Carefully remove the brie from the oven. Spoon the cranberry mixture over the top, spreading it evenly. If you’re using the balsamic vinegar, drizzle it over the cranberries now.
  7. Serve immediately. Transfer the dish to your serving board. Arrange crackers, sliced baguette, apple slices, or pear slices around it.

Notes

Don’t overbake the brie—it should be soft and puffy but still hold its shape. Let the brie sit at room temperature for 10-15 minutes before baking for even melting. Fresh rosemary is preferred; if using dried, use half the amount and crush it between your fingers. The cranberry mixture can be made up to 3 days ahead. Leftover baked brie can be stored in the refrigerator for up to 3 days.
