Lighter Cinnamon Apple Dumplings with Mountain Dew Glaze

These lighter cinnamon apple dumplings with Mountain Dew glaze are a quick and easy dessert that feels indulgent but is lighter than traditional versions. Tender cinnamon apples are wrapped in flaky crescent roll dough and baked with a tangy-sweet citrus glaze.

  • 2 medium apples (Granny Smith or Honeycrisp), peeled and cored
  • 1 can (8 oz) refrigerated crescent roll dough (reduced-fat if desired)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar
  • 1/2 cup Mountain Dew (regular, not diet)
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Vanilla ice cream or Greek yogurt for serving (optional)
  • Extra cinnamon for dusting (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish with butter or nonstick spray.
  2. Peel the apples, then cut them in half through the core. Remove the core and seeds to get four apple halves.
  3. In a small bowl, combine 1 teaspoon ground cinnamon and 2 tablespoons brown sugar.
  4. Open the can of crescent rolls and separate the dough into 4 rectangles (pinch seams together if needed). Gently stretch each rectangle slightly.
  5. Place an apple half in the center of each dough rectangle. Sprinkle about 1 teaspoon of the cinnamon-sugar mixture over the apple, then wrap the dough around it, pinching seams to seal. Place seam-side down in the prepared dish.
  6. Brush the melted butter over the tops of the dumplings. Sprinkle any remaining cinnamon-sugar over the tops.
  7. In a small saucepan, combine 1/2 cup Mountain Dew, 2 tablespoons unsalted butter, and 1/4 cup granulated sugar. Heat over medium heat, stirring occasionally, until butter is melted and sugar is dissolved (about 2-3 minutes). Remove from heat and stir in 1/2 teaspoon vanilla extract and a pinch of salt.
  8. Slowly pour the warm glaze over and around the dumplings in the baking dish.
  9. Bake for 25-30 minutes, or until the dumplings are golden brown and the apples are tender when pierced with a fork. Halfway through, spoon some glaze from the bottom over the dumplings.
  10. Let the dumplings cool in the dish for about 5 minutes before serving. Serve warm, optionally with vanilla ice cream or Greek yogurt.

Notes

For best results, use room-temperature apples. If the tops brown too quickly, tent with foil for the last 10 minutes. Let dumplings rest for 5 minutes after baking to allow the glaze to set. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
