A lighter version of the classic apple crisp, featuring tender cinnamon-spiced apples and a crunchy oat streusel topping. This healthier dessert uses less sugar and whole grains, making it a cozy fall treat without the heavy sugar crash.

Ingredients

Scale
  • 6 medium apples (about 2 lbs or 900g), peeled, cored, and sliced into 1/4-inch thick wedges (Honeycrisp or Granny Smith recommended)
  • 3 tablespoons (45ml) pure maple syrup
  • 1 tablespoon (15ml) freshly squeezed lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon (8g) cornstarch
  • 1 cup (90g) rolled oats (not quick oats)
  • 1/4 cup (28g) almond flour
  • 2 tablespoons (16g) all-purpose flour
  • 1/4 cup (50g) packed light brown sugar
  • 3 tablespoons (42g) cold unsalted butter, cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Greek yogurt or vanilla ice cream for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven.
  2. Peel, core, and slice the apples into 1/4-inch thick wedges (about 6 cups).
  3. In a large mixing bowl, combine the sliced apples, maple syrup, lemon juice, 1 teaspoon cinnamon, nutmeg, vanilla extract, and cornstarch. Toss until evenly coated. Let sit for 10 minutes to macerate.
  4. In a medium mixing bowl, whisk together the rolled oats, almond flour, all-purpose flour, brown sugar, 1/2 teaspoon cinnamon, and salt. Add the cold butter cubes. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Do not overwork.
  5. Pour the apple mixture (including juices) into an 8×8-inch baking dish and spread into an even layer. Sprinkle the oat streusel evenly over the top without pressing down.
  6. Place the dish on a baking sheet to catch drips. Bake for 35 to 40 minutes, until the filling is bubbly around the edges and the streusel is deep golden brown. If the streusel browns too quickly after 25 minutes, tent loosely with foil.
  7. Let the crisp rest on a wire rack for at least 10 minutes to allow the filling to set.
  8. Serve warm, spooned into bowls, topped with Greek yogurt or vanilla ice cream if desired.

Notes

Don’t skip the maceration step—it helps the apples release juices that thicken into a syrup. Keep butter cold for a crumbly streusel. Use a mix of apple varieties (e.g., Honeycrisp and Granny Smith) for best flavor and texture. Let the crisp rest for 10 minutes before serving to allow the filling to set.
