  • 1 tablespoon unsalted butter
  • 2 ounces white chocolate (optional, for drizzling)
  • Gold leaf or edible glitter (optional, for garnish)
  • Crushed pistachios or freeze-dried raspberries (optional, for garnish)

Instructions

  1. Prep the strawberries: Wash them gently in cool water and lay them out on a clean kitchen towel. Pat them completely dry—any moisture will cause the chocolate to seize. Let them sit on the towel for about 15 minutes at room temperature to ensure they’re fully dry. While they rest, line a baking sheet with parchment paper.
  2. Make the champagne chocolate: Chop the dark chocolate into small, even pieces. Place the chocolate in a heatproof bowl. In a medium saucepan, heat the heavy cream over medium heat until it’s just simmering (tiny bubbles around the edges, but not boiling). Pour the hot cream over the chopped chocolate and let it sit for 2 minutes without stirring (this is the ‘blooming’ method for a silky ganache).
  3. Add the champagne and butter: After 2 minutes, gently stir the chocolate and cream together with a spatula, starting from the center and working outward. Once smooth and glossy, add the butter and stir until melted. Add the champagne 1 tablespoon at a time, stirring gently after each addition. The mixture should look thinner with a slight sheen. Do not over-stir to avoid air bubbles.
  4. Cool the chocolate slightly: Let the ganache sit at room temperature for 5-7 minutes. It should still be fluid but not hot—the consistency of warm honey. If too warm, it will slide off the strawberries; if too cool, it will be too thick to dip.
  5. Dip the strawberries: Hold a strawberry by the stem (or use a toothpick if the stem is short) and dip it into the chocolate at a slight angle, submerging about three-quarters of the berry. Lift it out and let excess chocolate drip back into the bowl for a few seconds. If a big drip forms at the tip, gently scrape it against the edge of the bowl.
  6. Set the strawberries: Place the dipped strawberry on the parchment-lined baking sheet. Repeat with remaining strawberries. If adding garnishes (crushed pistachios, gold leaf, etc.), do so immediately while the chocolate is still wet. Work quickly, as the chocolate starts setting in 2-3 minutes.
  7. Chill to set: Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is firm to the touch. Do not leave them for hours, or condensation will form. A half-hour is ideal.
  8. Optional white chocolate drizzle: If desired, melt white chocolate in a small bowl (microwave in 20-second bursts at 50% power, stirring each time). Drizzle over the set strawberries using a fork. Return to the fridge for another 10 minutes to set the drizzle.

Notes

Ensure strawberries are completely dry before dipping to prevent chocolate from seizing. Let champagne sit at room temperature for 20 minutes before using. For best results, make no more than 24 hours ahead. Serve after 10 minutes at room temperature for optimal texture.
