Ingredients

Scale
  • 2–3 bunches fresh rosemary sprigs
  • 1 large wedge firm cheese (Gruyère, aged cheddar, or firm gouda)
  • Fresh cranberries (optional, for decorating trees)
  • Wooden toothpicks or small skewers
  • 8 oz Brie or Camembert
  • 6 oz Blue cheese (Gorgonzola or Stilton)
  • 6 oz Manchego or aged sheep’s milk cheese
  • 4 oz Fresh mozzarella pearls
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Genoa salami, sliced into thin rounds
  • 4 oz Soppressata, sliced
  • 4 oz Capicola
  • 1 cup assorted olives (Castelvetrano and Kalamata)
  • 1/2 cup cornichons or small pickles
  • 1/2 cup dried apricots
  • 1/2 cup dried figs or dates
  • 1/2 cup Marcona almonds or toasted almonds
  • 1/4 cup honey
  • 1 small jar fig jam or red pepper jelly
  • 1 large wooden board or slate platter
  • Fresh grapes (red and green)
  • Fresh figs, halved (if in season)
  • Fresh rosemary and thyme sprigs for garnish
  • Small bowls for olives, honey, and jam

Instructions

  1. Make the rosemary trees: Cut firm cheese into different-sized blocks. Trim rosemary sprig stems flat. Gently push trimmed end into cheese block. For larger trees, use multiple sprigs. Press cranberries onto sprigs for decoration. Set aside.
  2. Prep cheeses: Take brie out 20 minutes before serving. Place whole or cut into wedges. Crumble some blue cheese, leave a wedge intact. Slice Manchego into thin triangles. Drain and pat dry mozzarella pearls.
  3. Arrange meats: Fold prosciutto slices loosely. Layer salami and soppressata in overlapping pattern. Place capicola in small loose piles.
  4. Add accompaniments: Place small bowls with olives, honey, and jam on board. Fill empty spaces with cornichons, dried apricots, almonds, figs, and dates in clusters.
  5. Place rosemary trees in prominent spots. Add grape clusters and halved figs. Tuck extra rosemary and thyme sprigs around edges.

Notes

Take cheeses out of fridge 30 minutes before serving for best flavor. Don’t overcrowd the board; leave negative space. For vegetarian version, skip meats and double up on cheeses and vegetables. Rosemary trees can be assembled a few hours ahead and kept in fridge.
