Quick and easy beef tacos with a tangy lime crema, perfect for weeknight dinners or potlucks. Ready in under 25 minutes with simple ingredients.

Ingredients

Scale
  • 1 pound ground beef (80/20 works best)
  • 1 tablespoon olive oil
  • 1 small onion, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • Salt and black pepper to taste
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • Juice of 1 lime (about 2 tablespoons)
  • 1 teaspoon lime zest (optional)
  • Pinch of salt
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup diced tomatoes or pico de gallo
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Fresh cilantro, chopped (optional)
  • Lime wedges for serving

Instructions

  1. Make the lime crema first: In a small bowl, whisk together Greek yogurt, lime juice, lime zest (if using), and a pinch of salt. Set aside in the fridge.
  2. Heat a large skillet over medium-high heat and add olive oil. Let it get hot, about 30 seconds.
  3. Add diced onion and cook for 2-3 minutes until translucent.
  4. Add minced garlic and cook for 30 seconds.
  5. Add ground beef and let it cook without touching for 2 minutes to develop a brown crust. Then break it into smaller pieces and cook for 5-6 minutes until no pink remains.
  6. Sprinkle taco seasoning over the beef, stir, then add 1/4 cup water. Simmer for 2-3 minutes until liquid thickens and coats the meat.
  7. While beef simmers, warm tortillas in a dry skillet over medium heat for 20-30 seconds per side. Stack and cover with a towel.
  8. Assemble tacos: Spoon seasoned beef into warm tortillas. Top with lettuce, tomatoes, cheese, and a drizzle of lime crema. Garnish with cilantro and serve with lime wedges.

Notes

For best results, use 80/20 ground beef for flavor. The lime crema can be adjusted: add a pinch of sugar if too tart, or more yogurt if too thin. Store beef and crema separately; beef keeps 3-4 days, crema best within 2 days. Reheat beef in a skillet with a splash of water.
