These Quick Cranberry Baked Brie Bites with Puff Pastry are the perfect last-minute holiday appetizer. Ready in under 30 minutes with just 5 main ingredients, they combine buttery, flaky pastry, creamy melted brie, and tart-sweet cranberry compote for an irresistible crowd-pleaser.

Ingredients

Scale
  • 1 cup fresh or frozen cranberries
  • ¼ cup granulated sugar
  • 2 tablespoons orange juice
  • ½ teaspoon vanilla extract
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese
  • 1 large egg
  • 1 tablespoon water
  • Fresh rosemary or thyme for garnish (optional)
  • Flaky sea salt for garnish (optional)
  • Honey or balsamic glaze for drizzling (optional)

Instructions

  1. Make the cranberry compote: In a small saucepan, combine 1 cup cranberries, ¼ cup sugar, 2 tablespoons orange juice, and ½ teaspoon vanilla extract. Cook over medium heat, stirring occasionally, for 5-7 minutes until cranberries burst and mixture thickens slightly. Remove from heat and let cool.
  2. Preheat oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin with baking spray or butter.
  3. On a lightly floured surface, gently unfold the thawed puff pastry sheet. Roll it out slightly to about 10×10 inches. Using a 2-inch round cutter, cut out 12 circles, re-rolling scraps if needed.
  4. Press each pastry circle into a greased mini muffin cup, forming a small cup shape.
  5. Cut brie into 12 small cubes (about ½ inch each). Place one cube in each pastry cup.
  6. Spoon about 1 teaspoon of cooled cranberry compote on top of each brie cube.
  7. In a small bowl, whisk together egg and 1 tablespoon water. Brush edges of each pastry cup with egg wash.
  8. Bake for 12-15 minutes until pastry is puffed and golden and brie is melted and bubbly.
  9. Let cool in pan for 2-3 minutes, then gently remove bites from pan using a small spoon or offset spatula.
  10. Serve warm, garnished with fresh rosemary, flaky sea salt, or a drizzle of honey or balsamic glaze if desired.

Notes

Make the cranberry compote up to 3 days ahead and store in the fridge. Keep brie cold until assembly to prevent it from melting out. For best results, serve warm within 10 minutes of baking. Unbaked bites can be frozen for up to 1 month.
