These Quick Creamy Roasted Garlic Mashed Potatoes deliver deep, nutty garlic flavor in under 30 minutes using a clever microwave trick. Perfect for weeknights, this recipe yields silky, rich mashed potatoes with simple ingredients and minimal effort.

Ingredients

Scale
  • 2 pounds Yukon Gold potatoes (about 6–7 medium), peeled and quartered
  • 6 tablespoons unsalted butter, softened and cut into pieces
  • 1/2 cup heavy cream, warmed
  • 1 teaspoon salt, plus more for cooking water
  • 1/2 teaspoon black pepper, freshly ground
  • 1 whole head of garlic (about 10–12 cloves), separated and peeled
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Place peeled and quartered Yukon Gold potatoes in a large pot and cover with cold water by about an inch. Add a generous tablespoon of salt to the water. Bring to a boil over high heat, then reduce to a simmer. Cook for 12-15 minutes, until a knife slides through the largest piece with no resistance.
  2. While the potatoes cook, put the peeled garlic cloves in a microwave-safe bowl with 2 tablespoons of water, 1 tablespoon of olive oil, and a pinch of salt. Cover the bowl with a microwave-safe plate or plastic wrap (leave a small vent). Microwave on high for 2 minutes. Check if the cloves are soft and easily mashed with a fork; if not, microwave in 30-second bursts until tender.
  3. In a small saucepan or microwave-safe measuring cup, warm the heavy cream and butter together until the butter is melted and the mixture is hot but not boiling (about 45 seconds in the microwave). Set aside.
  4. Drain the potatoes well in a colander and let them sit for about 30 seconds to steam dry.
  5. Using a fork, mash the softened garlic cloves into a paste right in the bowl.
  6. Return the drained potatoes to the pot (off the heat). Mash them with a potato masher or press through a ricer. If using a masher, work in a folding motion to avoid overworking the starches.
  7. Pour the warm cream-butter mixture over the mashed potatoes, add the garlic paste, salt, and pepper. Fold everything together gently until just combined. Taste and adjust seasoning.
  8. Serve immediately. Transfer to a serving bowl, make a little well in the center, and add an extra pat of butter if desired.

Notes

For the smoothest texture, use a ricer. If you don’t have a microwave, soften the garlic in a small saucepan with water and oil over low heat for 5-7 minutes, or roast in a 400°F oven for 20-25 minutes wrapped in foil. Don’t overmix the potatoes to avoid gumminess. Warm the dairy before adding to prevent the potatoes from becoming stiff.
