These Quick Frankenstein Guacamole Bites on Tortilla Chips are a fast, forgiving, and endlessly customizable snack that turns a simple avocado into a fun, monster-like creation. Perfect for busy weeknights, they come together in just 10 minutes using pantry staples and whatever toppings you have on hand.

Ingredients

Scale
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 2 tablespoons finely diced red onion
  • 1 small clove garlic, minced (optional)
  • ¼ cup crumbled queso fresco or feta
  • ¼ cup diced tomatoes
  • 2 tablespoons pickled jalapeños
  • 2 tablespoons chopped cilantro
  • ¼ cup black beans, rinsed and drained
  • 2 tablespoons sour cream or Greek yogurt
  • Hot sauce to taste
  • 1 large bag of sturdy tortilla chips (restaurant style or scoop chips)

Instructions

  1. Prep your toppings: Dice red onion, tomatoes, crumble cheese, rinse beans, chop cilantro. Place in separate bowls.
  2. Make the guacamole: Cut avocados in half, remove pits, scoop flesh into a bowl. Add lime juice and salt. Mash with a fork or potato masher to desired consistency. Fold in diced onion and minced garlic. Taste and adjust seasoning.
  3. Assemble the bites: Lay tortilla chips in a single layer on a serving platter. Place a small dollop (about 1 teaspoon) of guacamole on each chip.
  4. Add toppings: Sprinkle chosen toppings over the guac-topped chips. Press down gently so toppings stick.
  5. Serve immediately while chips are crunchy.

Notes

Use thick, sturdy chips to prevent breakage. Assemble bites just before serving to keep chips crunchy. For a party, set up a ‘Frankenstein Bar’ with separate bowls of guac, chips, and toppings for guests to build their own. Guacamole can be made up to 24 hours ahead; press plastic wrap directly onto surface before refrigerating.
