These Quick Garlic Herb Brown Butter Mashed Potatoes come together in under 30 minutes using a microwave shortcut for perfectly tender potatoes. The nutty brown butter, sweet garlic, and fresh herbs create a rich, comforting side dish that’s perfect for busy weeknights.

Ingredients

Scale
  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, smashed
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • ½ cup whole milk or heavy cream
  • Salt to taste
  • Freshly ground black pepper
  • Fresh parsley, chopped (for garnish)
  • Flaky sea salt (for garnish)
  • Extra brown butter drizzle (for garnish)

Instructions

  1. Prep the potatoes: Scrub the Yukon Gold potatoes clean. Cut into 1-inch cubes.
  2. Microwave the potatoes: Place cubed potatoes in a large microwave-safe bowl with ¼ cup water. Cover and microwave on high for 8 minutes, then check for doneness. Microwave in 2-minute increments until tender. Drain excess water.
  3. Start the brown butter: While potatoes cook, cut butter into pieces and add to a small saucepan with smashed garlic, rosemary, and thyme. Cook over medium heat until butter melts, foams, and turns golden with a nutty aroma (5-7 minutes).
  4. Remove herbs and garlic: Use a slotted spoon to remove herb sprigs and garlic cloves. Set garlic aside to mash into potatoes later. Keep brown butter warm.
  5. Mash the potatoes: Add warm milk or cream to hot potatoes and mash with a potato masher or ricer. Season with salt and pepper.
  6. Add the brown butter: Pour warm brown butter over mashed potatoes and fold gently. Reserve a tablespoon for drizzling. Mash the reserved garlic cloves and stir in if desired.
  7. Serve immediately: Transfer to a serving bowl, drizzle with reserved brown butter, and garnish with parsley and flaky sea salt.

Notes

Don’t over-mash the potatoes to avoid a gluey texture. Warm the milk or cream before adding to keep potatoes hot. Watch brown butter closely as it can burn quickly. Use a light-colored pan to monitor browning. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
