This Quick Herb Butter Roasted Turkey Breast is a weeknight miracle, delivering all the juicy, tender, aromatic goodness of a full roast turkey without the hours of babysitting a giant bird. The herb butter does all the heavy lifting, and the whole thing is on the table in about 30 minutes of active time.

Ingredients

Scale
  • 1 (2 to 3 pound) boneless, skin-on turkey breast (or bone-in, see note)
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 teaspoon salt (kosher salt preferred; if using table salt, reduce to ¾ teaspoon)
  • ½ teaspoon black pepper (freshly ground)
  • 1 tablespoon olive oil
  • ½ cup chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the turkey breast completely dry with paper towels.
  3. Make the herb butter: In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, salt, and pepper. Mash together with a fork until well combined.
  4. Loosen the skin: Gently slide your fingers between the turkey skin and the meat to create a pocket, being careful not to tear the skin.
  5. Spread the herb butter: Take about three-quarters of the herb butter and push it under the skin, spreading it evenly over the breast meat. Spread the remaining butter all over the outside of the skin.
  6. Drizzle with olive oil: Rub the olive oil over the buttered skin.
  7. Place in the roasting pan: Put the turkey breast in your pan or dish. Pour the chicken broth into the pan around the turkey—not over the top.
  8. Roast for 30-40 minutes: Roast until the internal temperature reaches 155°F (68°C) in the thickest part of the breast. If the skin is browning too fast, loosely tent the turkey with foil for the last 10 minutes.
  9. Rest the turkey: Remove the pan from the oven and transfer the turkey breast to a cutting board. Let it rest, uncovered, for at least 10 minutes.
  10. Slice and serve: Slice against the grain into thick pieces. Spoon any pan juices over the top for extra flavor.

Notes

Don’t skip the meat thermometer for perfectly cooked turkey. Let the butter soften to room temperature for easy spreading. If using a bone-in turkey breast, add 10-15 minutes to roasting time. For dairy-free, use vegan butter. The herb butter can be made up to 3 days in advance.
