  • Ice cubes (enough to fill glass)
  • 2 tablespoons (30 ml) milk of choice (optional, for coffee)
  • 12 teaspoons (510 ml) maple syrup, honey, or simple syrup (to taste)
  • 1/4 cup (60 ml) whole milk, very cold
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon (15 ml) maple syrup
  • 1 tablespoon (15 grams) pumpkin puree (optional)

Instructions

  1. Brew and cool your coffee. If using freshly brewed coffee, let it cool to room temperature for about 10 minutes, or pop it in the fridge while you prepare everything else. Cold brew concentrate works beautifully too.
  2. Fill your glass with ice. Fill about three-quarters full. For zero dilution, freeze coffee into ice cubes.
  3. In a separate small cup or directly in your serving glass, stir together the cooled coffee, maple syrup (or sweetener), and splash of milk. Taste and adjust sweetness if needed.
  4. Pour the coffee mixture over the ice, leaving about an inch of space at the top for the cold foam.
  5. In a small bowl or mason jar, combine the very cold whole milk, pumpkin pie spice, vanilla extract, maple syrup, and pumpkin puree (if using). Whisk or stir gently to break up the pumpkin puree before frothing.
  6. Froth the mixture using a handheld frother (20-30 seconds), mason jar shaking method (30 seconds), or French press until thick and doubled in volume. The foam should hold its shape when spooned.
  7. Spoon the cold foam gently over the iced coffee to keep the layers distinct.
  8. Sprinkle a tiny pinch of extra pumpkin pie spice on top for garnish (optional).
  9. Serve immediately. Stir gently if desired, or sip through the foam.

Notes

For best foam, use very cold whole milk. If using pumpkin puree, stir it into the milk mixture before frothing to avoid clumps. The cold foam is best made fresh and used immediately. For dairy-free, use barista-style oat milk. To make your own pumpkin pie spice, mix 1/4 tsp cinnamon, a pinch of nutmeg, a tiny pinch of ginger, and an even tinier pinch of cloves.
