  • ¼ cup (50g) granulated sugar

  • 2 tablespoons (16g) all-purpose flour

  • ¾ cup (90g) old-fashioned rolled oats
  • ¾ cup (90g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons (85g) cold unsalted butter, cut into small cubes
  • ½ cup (100g) granulated sugar
  • 3 tablespoons (45ml) water
  • ¼ cup (60ml) heavy cream, at room temperature
  • 2 tablespoons (28g) unsalted butter, cut into pieces
  • ½ teaspoon flaky sea salt, plus more for finishing

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven.
  2. Make the salted caramel sauce first. In a medium saucepan, combine ½ cup (100g) granulated sugar and 3 tablespoons (45ml) water. Stir gently with a spatula just until the sugar is moistened. Place the pan over medium heat and let it cook, without stirring, until the sugar turns a deep amber color, about 5-7 minutes. Swirl the pan occasionally to even out the color.   3. Prepare the apples. Peel, core, and slice your apples into ¼-inch thick wedges. Place them in a large mixing bowl. Add 2 tablespoons (30ml) lemon juice, ¼ cup (50g) granulated sugar, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, 2 tablespoons (16g) flour, and a pinch of salt. Toss everything together until the apples are evenly coated.
  4. Make the oat crumble topping. In a medium bowl, combine ¾ cup (90g) old-fashioned oats, ¾ cup (90g) all-purpose flour, ½ cup (100g) packed brown sugar, ½ teaspoon cinnamon, and ¼ teaspoon salt. Add the 6 tablespoons (85g) cold cubed butter. Use a pastry cutter, two forks, or your fingers to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized pieces of butter remaining.
  5. Assemble the crisp. Spread the apple mixture evenly in your 8×8 baking dish. Drizzle about half of the salted caramel sauce over the apples—reserve the rest for serving. Sprinkle the oat crumble topping evenly over the apples, covering them completely.
  6. Bake. Place the dish on a baking sheet to catch any drips. Bake for 20-25 minutes, until the topping is golden brown and the juices are bubbling around the edges. If the topping is browning too quickly, tent loosely with foil for the last 5 minutes.
  7. Rest and serve. Let the crisp cool on a wire rack for at least 10 minutes. Serve warm, drizzled with the remaining salted caramel sauce and topped with a scoop of vanilla ice cream or a dollop of whipped cream. Sprinkle a little extra flaky sea salt on top if desired.

Notes

Don’t skip the resting time—it allows the juices to thicken. Keep butter cold for the crumble. Watch the caramel carefully as it can burn quickly. Use a mix of apple varieties for best texture. The caramel can be made up to a week ahead and stored in the fridge.
