These quick sparkling champagne jello shots are the ultimate New Year’s Eve party starter. With just 15 minutes of hands-on time, you can create festive, bubbly bites that look fancy but are incredibly easy to make.

Ingredients

Scale
  • 1 ½ cups champagne or prosecco (chilled, dry brut preferred)
  • ½ cup fruit juice (white grape, peach, or pomegranate)
  • 2 tablespoons granulated sugar (adjust to taste)
  • 2 ¼ teaspoons unflavored gelatin powder (about 1 standard packet)
  • Optional: 2-3 drops red or pink food coloring
  • Optional: edible glitter or gold luster dust

Instructions

  1. Bloom the gelatin: Pour the ½ cup of fruit juice into a medium bowl. Sprinkle the 2 ¼ teaspoons of unflavored gelatin powder evenly over the surface. Let it sit for 5-10 minutes without stirring. It will look like a weird, bumpy, congealed mess — that’s exactly what you want.
  2. Heat the mixture: After the gelatin has bloomed, pour it into a small saucepan. Add the 2 tablespoons of sugar. Heat over low heat, stirring constantly with a whisk, until the gelatin and sugar are completely dissolved. This takes about 2-3 minutes. Do not let it boil.
  3. Cool slightly: Remove the saucepan from heat and let it cool for 2-3 minutes. You want it warm, not hot. If it’s too hot, it will kill the bubbles in your champagne.
  4. Add the champagne: Slowly pour the 1 ½ cups of chilled champagne into the warm juice mixture, whisking gently as you go. You’ll see it foam up a bit — that’s good. Keep whisking until everything is well combined. If you’re using food coloring, add it now.
  5. Pour into cups: Arrange your shot cups on a baking sheet. Use a small funnel or a liquid measuring cup with a spout to carefully pour the mixture into each cup, filling them about ¾ full. Leave a little room at the top.
  6. Refrigerate: Carefully transfer the baking sheet to the refrigerator. Let the shots set for at least 4 hours, but overnight is better.
  7. Add toppings (optional): If you’re using edible glitter or gold luster dust, sprinkle it on top just before serving.

Notes

Bloom the gelatin for the full 5-10 minutes for best results. Use chilled champagne to preserve bubbles. Make these a day ahead for best flavor and texture. For non-alcoholic version, substitute champagne with sparkling cider or non-alcoholic sparkling wine. Store covered in refrigerator for up to 5 days.
