These Spooky Mummy Stuffed Jalapeno Poppers are a fun and delicious Halloween appetizer featuring spicy jalapenos filled with a creamy cheese mixture, wrapped in crescent roll dough to look like mummies, and baked until golden.   • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 12 large jalapeno peppers
  • 1 can (8 oz) refrigerated crescent roll dough
  • 24 small candy eyes
  • 1 egg, beaten with 1 tablespoon water
  • Optional: 1/4 cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Cut each jalapeno in half lengthwise. Remove seeds and white membranes with a small spoon. Rinse and pat dry.
  3. In a small bowl, combine softened cream cheese, shredded cheddar, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth.
  4. Spoon or pipe the filling into each jalapeno half, mounding slightly above the edge (about 1-2 teaspoons per half).
  5. Unroll crescent roll dough on a cutting board. Press seams together to form a solid sheet. Cut into thin strips, about 1/4 inch wide and 4-5 inches long.
  6. Wrap 3-4 strips of dough around each stuffed jalapeno half, leaving a small gap near the top for eyes. Do not wrap too tightly.
  7. Brush each wrapped popper with the beaten egg mixture. If using panko, sprinkle on now.
  8. Place poppers on prepared baking sheet, spacing about 1 inch apart. Bake for 14-16 minutes, until dough is golden brown and filling is bubbly.
  9. Let cool on baking sheet for 5 minutes. While still warm, press candy eyes into the exposed filling near the top.
  10. Serve immediately.

Notes

Wear gloves when handling jalapenos to avoid skin irritation. Keep dough cold for easier handling. Do not overstuff to prevent bursting. Let poppers rest 5 minutes after baking to set filling. Can be assembled up to 24 hours in advance and refrigerated. Freeze unbaked for up to 2 months.
