These spooky spider deviled eggs are the perfect Halloween appetizer—creamy, tangy, and topped with olive spiders. They’re easy to make, crowd-pleasing, and guaranteed to disappear at any party.

Ingredients

Scale
  • 12 large eggs (room temperature preferred)
  • 1/3 cup mayonnaise (Hellmann’s or Duke’s recommended)
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar (or pickle juice)
  • 1/2 teaspoon smoked paprika (plus extra for garnish)
  • 1/4 teaspoon salt (or to taste)
  • 1/8 teaspoon black pepper (freshly ground)
  • 1 can (6 ounces) large black olives (pitted)
  • 1/4 cup mayonnaise (for gluing spider legs)

Instructions

  1. Place 12 eggs in a large pot and cover with cold water by about 1 inch. Bring to a rolling boil over high heat, then cover, turn off heat, and let sit for exactly 12 minutes.
  2. Prepare a bowl of ice water. After 12 minutes, transfer eggs to ice water using a slotted spoon. Let sit for at least 5 minutes.
  3. Peel eggs: gently tap each egg on the counter to crack the shell, roll between palms, and peel starting from the wider end. Rinse under cool water.
  4. Slice each egg in half lengthwise with a sharp knife. Pop out yolks into a medium mixing bowl. Arrange egg white halves on a serving platter.
  5. Add mayonnaise, yellow mustard, vinegar (or pickle juice), smoked paprika, salt, and pepper to the yolks. Mash with a fork until smooth. Taste and adjust seasoning.
  6. Spoon filling into a piping bag or zip-top bag with a corner snipped off. Pipe filling into each egg white half, mounding slightly.
  7. Drain black olives and pat dry. Slice each olive in half lengthwise. One half is the spider body; slice the other half into thin strips for legs (8 strips per spider).
  8. For each deviled egg, place one olive half on top of the filling, cut side down. Arrange 8 thin olive strips as legs (4 on each side), using a tiny dab of mayonnaise to glue them if needed.
  9. Sprinkle extra smoked paprika over the top. Cover platter with plastic wrap and refrigerate for at least 30 minutes before serving.

Notes

For easier peeling, use older eggs (a few days old). The secret to the filling is a splash of pickle juice for brightness. Assemble spiders no more than 4 hours before serving to keep olive legs crisp. Store leftovers in an airtight container in the fridge for up to 2 days. Do not freeze.
