A glorious, sticky, pull-apart cinnamon roll casserole made with canned rolls and a secret heavy cream trick. Perfect for a low-stress Christmas brunch that tastes like the holidays on a fork.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup packed brown sugar
  • 1/2 cup chopped pecans or walnuts (optional)
  • Flaky sea salt (a small pinch)
  • Reserved icing packets (from the cinnamon roll cans)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each roll into 4 roughly equal pieces. Scatter the pieces evenly in the prepared baking dish.
  3. In a small bowl, whisk together the heavy cream, vanilla extract, ground cinnamon, and ground nutmeg. Pour this mixture evenly over the chopped cinnamon rolls.
  4. Drizzle the melted butter over the top of the casserole. In a separate small bowl, mix the brown sugar and chopped pecans (if using). Sprinkle this mixture evenly over the top. Add a tiny pinch of flaky sea salt over the brown sugar.
  5. Bake for 25 minutes. After 25 minutes, loosely tent the dish with aluminum foil and bake for another 15-20 minutes, until the edges are golden brown and bubbling and the center is set but still slightly soft.
  6. Remove the casserole from the oven and let it cool for 5-10 minutes. Microwave the reserved icing packets for 5-10 seconds to loosen them up. Drizzle the icing over the warm casserole in a zigzag pattern.
  7. Serve warm, scooping out portions with a large spoon or spatula.

Notes

Don’t skip the heavy cream—it creates a custard-like center. Use the foil trick to prevent burning the top. Let the casserole rest 5-10 minutes before icing so the icing stays white. For a make-ahead option, assemble the night before, refrigerate, and add 5-10 minutes to bake time.
