  • 1/2 cup (45g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (60g) powdered sugar, for rolling
  • 1/2 cup (60g) powdered sugar, for icing
  • 23 tablespoons milk or water
  • 1/4 teaspoon vanilla extract (optional, for icing)

Instructions

  1. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
  2. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. The dough will be soft and slightly sticky.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats. Place 1/2 cup powdered sugar for rolling in a shallow bowl.
  7. Scoop the dough into 1.5-tablespoon portions (about golf ball size). Roll each into a smooth ball, then roll generously in powdered sugar.
  8. Place dough balls on prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until puffed and cracked with set edges but soft centers.
  9. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
