Ingredients

Scale
  • 1 pound ground turkey (93/7 lean)
  • 1/2 cup plain breadcrumbs (panko preferred)
  • 1/4 cup milk (whole or 2%)
  • 1 large egg, lightly beaten
  • 1/4 cup finely grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for browning)
  • 12 slider buns (e.g., Martin’s potato rolls)
  • 1 1/2 cups marinara sauce
  • 6 slices provolone cheese, halved
  • 3 tablespoons unsalted butter, melted
  • 1 clove garlic, minced (for butter)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large mixing bowl, combine ground turkey, breadcrumbs, milk, beaten egg, Parmesan, minced garlic, oregano, salt, and pepper. Mix with your hands until just combined; do not overwork.
  2. Form mixture into 12 uniform meatballs, about 1.5 inches in diameter.
  3. Heat olive oil in a large skillet over medium-high heat. Brown meatballs on all sides, about 2-3 minutes per side, working in batches if needed. They should be deeply golden outside and still raw inside.
  4. Preheat oven to 375°F (190°C).
  5. Slice slider buns in half horizontally, keeping tops and bottoms connected if possible. Place bottom halves in a baking dish or on a lined baking sheet.
  6. Spoon half the marinara sauce over bottom buns. Arrange browned meatballs on top, then spoon remaining sauce over meatballs. Lay provolone halves over the top.
  7. Place top buns on, pressing gently. In a small bowl, mix melted butter with minced garlic and brush generously over bun tops.
  8. Cover loosely with aluminum foil and bake for 15 minutes. Remove foil and bake another 5-10 minutes until cheese is melted and tops are golden brown.
  9. Let sliders rest for 5 minutes before serving. Garnish with fresh parsley if desired. Serve warm.

Notes

Don’t skip browning the meatballs—it adds flavor and texture. For best results, use 93/7 ground turkey. Toast bottom buns under broiler for 30 seconds to prevent sogginess. Sliders can be assembled a day ahead and baked just before serving.
