  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring (or 1 teaspoon gel)
  • 1 teaspoon white vinegar
  • ½ cup (60g) powdered sugar, for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt until evenly mixed.
  3. In a large bowl, whisk together the melted butter and granulated sugar until smooth. Add the egg, vanilla extract, red food coloring, and white vinegar. Whisk until combined and the color is uniform.
  4. Pour the dry ingredients into the wet mixture. Stir with a spatula until just combined. Do not overmix. The dough will be soft and slightly sticky.
  5. Place the powdered sugar in a small bowl. Use a fork to break up any clumps.
  6. Using a cookie scoop or tablespoon, scoop out about 1.5 tablespoons of dough. Roll into a ball between your palms. Drop the ball into the powdered sugar and roll to coat generously. Place on the prepared baking sheet, spacing them about 2 inches apart. You should get about 18 cookies.
  7. Bake immediately for 10 to 12 minutes. At 10 minutes, the cookies will be soft and puffy. At 12 minutes, they’ll be slightly firmer but still tender. The edges should look set, and the tops will have cracked.
  8. Let the cookies rest on the hot baking sheet for 3 minutes. Then transfer them to a cooling rack. The cracks will become more pronounced as they cool.
  9. Once cooled, you can sift a little more powdered sugar on top for a snow-covered look (optional).
